Burnt Brussels Sprouts

Happy Wednesday everyone! Little delayed this week due to taking off on Monday – needed a day to myself ha. We are 3 weeks into the year – how is it going? It has seemed like such a long month so far. Christmas felt forever, last year (bdum tss). But are you on track for your resolutions and goals?

Keto game is still strong. I have currently lost 14 lbs – whoop! Still trying to get into ketosis I think or stay in it? Not sure, but I don’t feel like I’m really in that spot yet. I’m definitely still dealing of my version of the “keto flu” because my energy is all over the place. Keto flu, in case you don’t know, is when your body is trying to get used to burning fat over burning sugar. Your energy levels deplete as your store sugar (turned fat) is burned. So you get flu-like symptoms. I took off work Monday and got some good errands done and some things done around the apartment but I was exhausted after. Had to take a nap!

I ran my first race of 2020! Completed the Frisco Cocoa Classic 5K with a time of 55 minutes. I was surprised at how well I did and also how far behind I still am. I came out of the gate a little fast because my shin splints flared up but overall my pace was really well. Happy for the first run. I did realize as I started floating to the back of the pack how slow of a walker I am! My legs are short so my stride is short but dang.

My next race is in 2 weeks (lord) and it’s the Dallas Hot Chocolate 5K/15K. And yes, I chose the 15K. That’s 9.6 miles. NINE POINT SIX MILES. Baaaayyyyyybay. I have to have a minimum pace of 15 minutes per mile so that is my goal for the next 2 weeks to get to. I am excited because my sister is going to run/walk it with me. This is like the 5th year in a row that I’ve signed up for it and I have yet to run it so maybe 5th time is the charm! I have a few races that I’m trying to decide for the upcoming springs months so if you know of any, send them my way!

I was going to make this long post that was all insightful and sh*t but couldn’t find the right words and honestly, I’m tired ha. But last week I was making dinner and made roasted chicken breasts and Brussel sprouts. I stuck the chicken in and put the sprouts on the bottom rack. Forgot to set a timer so they burned. And I mean BURNED. Like charred to the max, black, burned. I was a little upset because I was looking forward to eating that with my chicken and caulirice. But I tasted one that was less burnt and honestly, it was good. Like a good crisp and not burnt flavor. So I ate a burnt one and it was fine! Moral of the story, don’t forget to set a timer hahahahah. JK. Sometimes failures happen. Sometimes those failures turn into something you weren’t expecting. Sometimes the outcome is still great, just a different flavor.
