Breakfast Sandwich

Good Morning everyone – Happy Thursday! I found this recipe on Pinterest and freaking love it. It is a Keto Pancake recipe to be used as the “bread” of a breakfast sandwich, McGriddle style. Here you go:

Makes 2 pancakes

Ingredients

  • 1 Tbsp Almond Flour
  • 1 Tbsp Coconut Flour
  • 1 Tbsp Oil (I used Olive Oil)
  • ½ tsp of baking poweder
  • 1 egg
  • Splash of cream (I used vegan creamer instead, did the same thing)
  • 1 tsp of sweetener (optional)
  • 1 tsp of vanilla (optional)

Directions

Mix everything together above. Pour 2 small pancakes into skillet prepped with oil or butter. Cook until bubbles, then flip and cook another 2-3 minutes.

Make Breakfast Meat (I used bacon)

Make Eggs (your preferred way, I did about 2 scrambled)

Start with Pancake on bottom. Spread a little strawberry jam on the bottom (about ½ Tbsp – optional). Stack eggs, bacon, another ½ Tbsp of jam and final pancake.
