Happy Tuesday! It’s been a bit, hasn’t it?
It’s been almost 6 months since I’ve posted a recipe and over a year since I’ve posted anything. To say that I got busy during the pandemic and “recovery” is an understatement. You just start adding things on to your plate because the plate can always be taken away, right?
Well since we last talked in February 2021, when I travel to onboard a hotel in Orlando (wow…that seems a lifetime ago), I’ve changed jobs. Since mid-September I have been working for a hotel brand, on the corporate worldwide sales team, but I support 5 hotels across the US. My hotels range from 65 rooms to 220 rooms and it’s been pretty great. I get to work remotely from my home and honestly, the freedom that comes with that is intangible.
I took a vacation since we’ve last talked. Traveled to Hilton Head, SC in August of 2021. It was such a great time and definitely needed. I took a vacation a few weeks ago in March. Decided a road trip was the better option this time and grabbed my mom to come along too. We went to visit my friend in Tupelo, MS who opened a gorgeous hotel. The hotel was so nice and the town is really quaint. It’s small town yet large which reminds me of my home town.
I hope to get back into writing more. I definitely want to post more food and recipe content so keep an eye out for that. I am trying to be more healthy and start back my running. I have a 5K this weekend that I am under-prepared for. But hopefully it starts off a renewed spirit. Maybe?
